Sorry, I don't have the recipe handy but we've made jelly and syrup from the juice of the fruit.  It has a nice purple (Eastern variety of PPC) color.  I believe we used the blueberry recipe from the pectin box to make the first batch then we adjusted the sugar and pectin a bit.

Additionally, http://www.TriVita.com sells a "Nopalea" drink that is reported to help with inflamation.  We picked up a few bottles and I will say that it is tasty but the product is too expensive and the company is set up as a MLM so, if you purchase, expect that the seller will hound you to buy more.

Maybe we can all just make our own nopales drinks.  ;D
Even if the grid fails we can make our own.
