I love ginger root. Recently my daughter made us up a big batch of veg juice with ginger root in it. A few lumps to chew on but it seemed to chase away a cold. Hardly get sick anymore...I mean not acutely sick like flu etc.

I suppose a person could improvise a lot in making wonderful meals with ginger.
Ginger  just needs to be peeled and grated, cooked until tender - perhaps ten minutes or more.  Cook it
along with other ingredients you have on hand to make soup.

Ginger Chicken Soup
With noodles and cilantro  this is a big hit at a restaurant in L.A.

RE making your own ginger soup:
This recipe below seems sort of gourmet ...a little difficult to make. It does look good and those
ingredients are

Chicken Ginger Soup
Serves/Makes: 3    |   Difficulty Level: 3    |   Ready In: 30-60 minutes

1 tablespoon olive oil
1 carrot -- thinly sliced
1/2 small onion -- sliced
2 large mushrooms -- sliced
1 large jalapeno pepper -- seeded and finely diced
1 tablespoon butter
2 chicken breasts, no skin, no bone
2 tablespoons all-purpose flour
1 quart low-sodium chicken broth
4 medium red potatoes -- peeled and cut into large dice
1 teaspoon mild curry powder
1 tablespoon grated fresh ginger
2 teaspoons tamari soy sauce
2 teaspoons lemon juice

Prepare vegetables and cut chicken into 1-inch cubes; set aside.

Heat 3 to 3-1/2 quart sauce pan for 1 minute, add olive oil and heat for 30 seconds. Stir in sliced carrot, onion, mushrooms and jalapeno pepper. Saute about 2 minutes, or until onion is slightly softened. Stir in butter.

When melted, add chicken and saute over medium-high heat about 2 minutes. Sprinkle with flour and continue to saute until flour is slightly browned.

Reduce heat to medium and gradually add chicken broth, stirring constantly so it doesn't get lumpy. After all the broth is added, turn up heat to bring it to a boil. Add potatoes, bring to a boil again, then reduce heat to a simmer.

Stir in curry powder, fresh ginger, tamari or soy sauce and lemon juice. Continue cooking until potatoes are tender, about 10 minutes. Taste and adjust seasoning according to taste.

It's one of those foods which keeps comparatively well.
Cabbage, potatoes, radishes, onions, carrots, ginger etc.

Ginger (Zingiber officinale)

Ginger contains substances that are thought to fight inflammation and reduce painful spasms in the uterus.

This popular kitchen herb has been shown to reduce the production of prostaglandins, hormone-like chemicals that are a contributing factor in causing period pain and inflammation.

In a double-blind study from 2009, 150 women starting their periods were given either 250 mg. of ginger powder, 400 mg. of ibuprofen or 250 mg. of mefenamic acid, both nonsteroidal anti-inflammatory drug (NSAID), four times per day for three days.

The study results showed that ginger seemed to be just as effective when compared to the conventional pain relief medication (NSAID).

Store the crystallized ginger in an airtight container in a dark, cool place. Because it's cooked and sugar and then coated with sugar, it will keep for several months. Place the sliced ginger in a medium pot and cover with water. Bring to a boil and simmer for 30 minutes.Jun 5, 2015

Yowbarb Note: I saw a reference that the red yeast rice can cause similar side effects to statin, will post more on it soon.

One 2014 study showed that ginger can lower your total cholesterol and triglycerides levels, while a study conducted in 2008 showed that it can reduce your LDL cholesterol levels and boost your HDL cholesterol.
