A traditional Christmas pudding recipe with no extra sugar added to the bread besides the fruit:

Chop 3/4 c of a few of your favorite unsulfited dried fruits (cherries, cranberries, apricots, raisins, currants, prunes, dates...) or less of each if you are adding several kinds.

Throw them into a large mixing bowl.

Zest two clementines and add to fruit.  Squeeze the remainder of the clementines over the dried fruit.

Mix 2/3 c good bread crumbs, 1 1/3 c flour, and 1 1/3 c solid butter til crumbly and dump over fruit. 

Add 2 whole eggs and 1 3/4 c cream.

Mix with spoon, then flour your hands and form a ball. 

Heavily butter a mold or medium mixing bowl, or individual portion dishes and add the dough, leaving a little room at the top of the dish(es).

Cut a circle out of parchment or waxed paper larger than the rim of the bowl, and press it onto the dough ball firmly.

Top bowl with 2 sheets of foil, sealing the edges around the rim of the bowl.

Tie a long string under the rim of the bowl and then tie the string into a handle.

Immerse the bowl into a stockpot of simmering water and cover for 4 or 5 hours.

Lift the bowl out of the pot with the string handle and let it cool.

Invert the bowl onto a pretty plate, platter or cake pedestal. 

Either drench in brandy as is or flame the brandy and pour over the pudding (might best be done outdoors).

Alternative: Brandy sauce with alcohol cooked out: Whisk brandy and a little brown sugar together in proportion to-taste in saucepan over low flame.  Remove from heat.  Add in a little sea salt and cold butter broken into bits, continuing to stir until the sauce thickens and is uniform in color.  Pour over pudding and allow to soak in.

Whip heavy whipping cream with a little sugar and pour over individual slices when ready to serve.

It can be garnished for a centerpiece on the table.

Around 10:45 p.m. tomorrow night, the Eastern Hemisphere will witness all or part of a nearly total Christmas solar eclipse that will appear to form a ring of fire around the sun, with the moon occulting it in the center.  It will not be visible in North America:
